Grinch Crinkle Cookies ❄︎ 5th Baking Day of Christmas 2015

The Grinch hated Christmas — the whole Christmas season.
Now, please don’t ask why; no one quite knows the reason.
It could be, perhaps, that his shoes were too tight.
Or it could be that his head wasn’t screwed on just right.
But I think that the most likely reason of all…
may have been that his heart was two sizes too small.

Inspired by the much beloved (and green) Grinch who stole Christmas, these vanilla crinkle cookies are guaranteed to make hearts grow three sizes with glee!

I cannot take credit for this adorable concept. I found it In Katrina’s Kitchen, but decided to make them from scratch rather than using pre-made cake mix. The three words that best describe these cookies are as follows, and I quote: Yum! Yum! Yum!

They have a delightful crispy exterior with a soft, chewy center. The little heart-shaped sprinkle is adorable and adds a pleasing crunch to the bite. Lightly sweetened, fun and festive.

Maybe Christmas, he thought… doesn’t come from a store.
Maybe Christmas, perhaps… means a little bit more!
And what happened then? Well, in Whoville they say
That the Grinch’s small heart grew three sizes that day.

Grinch Crinkle Cookies

Ingredients
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp pure vanilla extract
  • 1 tsp almond extract
  • green food coloring
  • 1/2 cup powdered sugar
Directions
  • Step 1 Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Step 2 In a large bowl, whisk together flour, baking powder and salt. Set aside.
  • Step 3 In a separate large bowl, beat butter and sugar until light and fluffy, 3-5 minutes. Add egg and egg yolk, blending after each addition. Add almond, vanilla and green food coloring (I used about 15 drops) and mix until combined. With mixer on low speed, slowly add dry ingredients into wet and mix until just combined.
  • Step 4 Pour powdered sugar into a small bowl. Using a cookie scoop or large spoon, shape dough into a ball. Drop into powdered sugar and roll to coat evenly, then transfer to baking sheet. Repeat with remaining dough. Bake for 10-13 minutes until golden brown around edges and still soft in the center.
  • Step 5 Upon removing from oven, immediately press heart-shaped sprinkle in the center of each cookie. Allow to cool on baking sheet 2 minutes, then transfer to wire rack to cool completely.
