If you're still working out a game plan for Sunday, try one of my favorite Super Bowl traditions and make this delicious chili to enjoy with the big game!

The great thing about this chili is that you can make it the day before — or even the morning of — game day. Just pop it into a slow cooker and it’s piping hot and ready to eat come game time. Put out an assortment of delicious toppings — sour cream, chives, shredded extra sharp cheddar cheese, crispy tortilla strips, crackers, sliced jalapenos — and some quality sides so folks can serve themselves. ‘Cause at my house, you’re on your own after the opening kick!

Here are a few ideas for tasty sides and refreshing beverages to serve alongside V’s Super Bowl Chili:

As a bonus, you can whip up some Fritos Chili Pies! Just add a couple spoonfuls of chili and choice toppings to snack bags of Fritos Corn Chips and enjoy right out of the bag with a spoon for some fun game-day fare. {Kinda reminds me of my high school days at the 7-Eleven hot dog bar — but waaay tastier!}

V’s Super Bowl Chili

Ingredients

  • 1 1/2 pounds ground beef
  • 3 garlic cloves, minced
  • 1 yellow onion, chopped
  • 1 1/2 Tbsp chili powder
  • 1 Tbsp ground cumin
  • 1 tsp ground oregano
  • 1 tsp ground red pepper {optional}
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 dried bay leaves
  • 1/2 cup warm water
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 can (16 oz) red kidney beans, rinsed and drained
  • 3-4 all-beef hot dogs, sliced {for the kiddos}
  • toppings: sour cream, chives, shredded cheddar cheese, tortilla strips, crackers, sliced jalapenos

Instructions

  • In a large stockpot, crumble and brown ground beef over medium-high heat. Add onions and garlic and cook for additional 2-3 minutes.

  • Add chili powder, cumin, oregano, red pepper {if you like it spicy!}, salt, pepper, bay leaves, diced tomatoes, tomato sauce and warm water. Stir to combine. Reduce heat to low and simmer for about 30 minutes.

  • Meanwhile, empty beans into colander and thoroughly rinse and drain. {I use red kidney beans and sometimes Great Northern beans; it's really up to you. Pinto beans work great, too.} Add beans and sliced hot dogs to chili and simmer for another 20 minutes.

  • Remove bay leaves and serve piping hot and piled high with an assortment of delicious toppings.

      Sure wish we still had the Boot… this will do for food in its absence. And Cheetos puffs with Miller High Life. :)
